Pour pallier ce manque, Stockbox Grocers, un groupe d'entrepreneurs de Seattle vient de créer le concept d'épicerie pop-up en transformant des containers en épiceries mobiles. Installées sur des parkings, accessibles à pied par le voisinage et achalandées en produits frais, ces épiceries-containers ambitionnent d'atteindre des populations qui n'ont pas accès à une offre alimentaire abondante. Le mythe du pauvre qui ne voudrait pas avoir accès à des produits frais ou bios est ainsi brisé souligne Carrie Ferrence, initiatrice du projet. Pour l'instant un prototype est en test, avec en ligne de mire, 4 nouveaux containers à installer d'ici la fin de l'année prochaine.
