We cast an epicurean, quirky, joyful and urban eye over fooding. We do not aim at saving nor feeding the world.

Farming is Charming

Openings are usually meant for art exhibitions. But in Berlin things may work in a slightly different way. Yesterday it was a Farm Opening that took place in a former Maltmill. Berlin is always surprising !
Maltmill Factory - Usine de malt

De quoi s'agit it ?

What is it all about ? Four observations helped shape this urban agriculture project.
1. CO2 Footprint : between 17 and 22 % of global CO2 emissions come from agriculture.

2. Water Footprint : 70 % of water is used in agriculture.

3. Ocean Footprint : 85 % des mers sont en surpêche
3. Ocean Footprint : 85 % of seas suffer from over fish catch

4. Feed Footprint : to get 1 kg sirloin steak, 8 kg are necessary to feed the beef. For 1 kg fish raised in Berlin Maltmill, only 1,2 kg are necessary to feed the fish.

Therefore better to raise fish than fish it, better to raise fish than beef, better to grow local vegetables and save water at the same time. The concept 'Charming Farming' that aims at developing aquaculture and vegetable growing at the same time combines all these factors. How does it work ? The water from fish ponds is enriched with vegetable nutrients, fish are therefore stronger, and every second more organic... The water coming from the fish ponds is used to irrigate vegetable fields.

The Farmer's Market plans to offer its first vegetables at the beginning of May. Fish lovers will have to wait a little longer, so that small fish can become big.

At the time being, only a few herbs are available. Fortunately, we can enjoy the project drawings. And with them, we feel much more comfortable with the idea of saving the world..

'Beware ! It May Be Tasty' is the slogan of Comptoir de Belle Ilea new cannery venture, set up 2 years ago by a former advertising executive in Belle Ile en Mer, a small island off the French West Coast.

The whole collection of sardines products is stored in a  'Sardine Library', a cardboard box that you can easily carry under your arm.

You may also want to try their pork pâtés or fish soups. You can then choose to store all your preserves in a cardboard wallet for a safe  trip to the continent.

You can test and taste their slogan on their stand, until 25 October at the Sial Paris, the World Food Fair.

Still Like

It all started with this photo, which has been shot by Soungalo Malé, a Malian photographer of the sixties, whose work is presented in Bamako at the African Biennial of Photography until the end of December 2011. This itinerant photographer was going from one village to the next, setting up a studio with a simple fabric for background, and taking pictures of humble people. It made us want to recreate this photo in a temporary studio.

With the benevolent help of Hotel Faro, we borrowed the neighbour's bicycle, enlisted Adama, the receptionnist and Sitan, the children's nannie, and spread a quilt cover for the background.. and that's that done ! almost actually... because our immoderate love for still life made us add a few things that did not exist in Soungalo Malé's photo...

At the Segou market, we had spotted teninni fish, rich in oil, perfect for frying, and mostly available in January-February... and also dodo, this delicious but cursed fish that we wrote about in a previous post. We then adorned the bicycle with a few dodos hanging from the handlebar and teninnis from the frame. This is the Still Like concept ...
Exhibitions never show the making of, what a pity ! Here, it is important to know that the quilt cover was kindly held by Chiaka, the valet, and Koniba, the gardener.

The Fish Road - The Reel Catch

What would Fish and Chips be without a newspapers wrapping ? This very Bristish tradition is being renewed by the young designer Jesse Harris. Whilst at Edinburgh College of Art he designed for a Fishmonger  an identity package combining illustration work, packaging and innovative branding.

The Fish Road - The Hilsa Temptation

"My kingdom for a horse !" cried out Richard III in Shakespeare's play. "My diet for a hilsa !" could answer Manmohan Singh, the Indian prime minister, while visiting Bengladesh.

Indeed the Times of India reports that hilsa fish, considered as a national culinary treasure in Bengladesh, managed to prompt him to break his vegetarian status : "I am willing to break my vegetarian vow because I have heard about the delicious dish of hilsa fish. I am vegetarian...(but) I am willing to make that exception." Nobody can resist the hilsa temptation..

We would have loved to carry on the fish road towards Timbuktu but because of the risk of hostage-taking, Northern Mali has been classified as a red area by Western embassies.

We will thus only know Timbuktu through its brand named mineral water that actually comes from the surroundings of.. Bamako.

It is surely time to change our subject of study. Goats will do ?

In Mopti, fish gets cured. Salt blocks come from the mine of Taoudenni that once hosted a labour camp, a very useful place to send opponents to. From the heart of the Sahara desert at the far end of Mali, Tuaregs transport salt and sell it at the Mopti market. Salé is the most famous and very much in demand fish of the Niger River. To preserve it and send it all over the region, people cure it. The land road that begins in Mopti and heads eastward across the Dogon region to Burkina Faso is called.. the Fish Road..

Malian Bobos belong to an ethnic group that often is Christian, eats dog and lives in the San region. Every year in June, San celebrates the discovery of three sacred places : Santoro (the sacred wood), Karantela (the sacred well) and Sanké (the sacred pond) and devotes itself to Sanké Mô, a collective fishing rite that has been going on for more than 600 years. It always starts with offerings to the river gods, then fishermen coat themselves with mud and spray water from the Sanké pond all over themselves. It is believed to fulfill wishes and cure illness. Next they go into the water and fish with nets they made on purpose. Fishing further extends into a huge party on the main public place where tomtom players, hunters, griots and traditional wrestlers keep the crowd alert until the night is over.

The Fish Road continues in Ségou, in the Bambara region. There we are introduced to the dodo, a pretty yellow fish that is  cursed because it is a bit lethal when its bile is not skillfully removed.  May be it is a fugu's cousin, the famous Japanese killer-fish.. However harmless dodo tastes like monkfish, really nice.. Still, it has not a good reputation and is difficult to find in the market. Only kids eat it. Its skin is very thick and is used for tomtoms.

Gourmet journeys do not often mention the Malian Fish Road... It starts in the bush in Sélingué, where a dam was built more than 20 years ago, creating a lake and enabling irrigation of surrounding fields. The Bozos, an ethnic group of fishermen, catch manogo there, an ugly fish with a moustache. They smoke it to preserve it 3 months.. If properly done... The 3 small fish I bought were burnt off and rotten after a few days

In this tropical environment I had not imagined that I would come across a group of Touaregs from the desert area of Gao, 2 000 km up north. They are on a study tour and come from villages that are doomed to relocation because of a dam contruction project in their region. They turn up to greet the local authorities, pose for the photo and then vanish in the dust of the laterite track. Will they run around the paddy fields ? Will they learn how to smoke fish ? Do they like still life ? It remains a mystery..
