Vrai - Faux

Les lecteurs de Vegnews sont abasourdis, nous dit El Pais.  Leur revue chérie les a trahis en publiant des années durant des photos de plats censés être végétariens alors qu’en réalité ils contenaient des produits carnés. Anathème absolu ! Vegnews piochait ses photos dans le fonds d’une banque de photos pas franchement végétarienne, affirmait sans vergogne que les plats étaient à base de soja  et retouchait au besoin les photos, grâce à Photoshop, en gommant ici ou là un os qui aurait fait désordre. Le pot aux roses a été découvert par le blog Quarrygirl provoquant une tempête sur la planète végétarienne. Pour sa défense, Vegnews a invoqué son manque de moyens, l’empêchant de commanditer des photos de plats végétariens.  Puis face à l’ire de ses 210 000 abonnés et des 2 millions de visiteurs de son site web, la revue s’est tout simplement excusée et s’est engagée à construire une banque de photos végétariennes.

Vegnews readers are in shock, reports El Pais. Their beloved magazine has been cheating them for years and publishing fake vegan photos. Damn ! Vegnews  has been purchasing rock-bottom priced stock photos of non-vegan things, pretending they were vegan and even photoshopping out bones when necessary. The blog Quarrygirl  discovered the truth which subsequently provoked a wave of protest on the vegan planet. In the first place, Vegnews explained that lack of money was to blame because it was preventing them from having vegan photos shot. Then, to quiet down the anger explosion of their 210 000 suscribers and 2 millions web visitors, they just apologized... flat... and promised to start building a vegan photo data base.

La tradition végétarienne  bouddhiste ne rechigne pourtant pas devant le faux. Dans les monastères chinois et vietnamiens, pour les moines mais aussi pour les visiteurs, les chefs végétariens redoublent de créativité lorsqu’il s’agit d’imiter la viande en utilisant des protéines de blé, du soja, de l’agar-agar... A Hanoï, l'un des plus vieux restaurants de la ville, le Com Chay Nang Tam (au 79A Tran Hung Dao pour les habitués) applique ces préceptes bouddhistes. On y mange un sublime poulet à la citronnelle, des tomates farcies, des brochettes de porc... tout dans l’illusion de la viande car à base de tofu, légumes, amidon...



The vegetarian Buddhist  tradition is not afraid of fake though. In Chinese and Vietnamese pagodas, vegetarian chefs are eager to imitate meat for visitors and monks alike and their creativity has no limit when counterfeiting meat with  wheat proteins, soybean or agar agar. In Hanoi, one of the oldest restaurants in town, Com Chay Nang Tam (the one in the French colonial house at 79A Tran Hung Dao) is cooking according to Buddhist principles. It offers excellent lemongrass chicken, stuffed tomatoes, grilled pork skewers.... and all is illusion since they are made of tofu, vegetables, starch...

Ainsi, tout ne serait que leurre ? Le Bouddha le disait déjà... Ferran Adrià, le chef d’El Bulli, pourrait abonder dans ce sens, lui qui propose une soupe qui n’en deviendra une que quand elle fondra...

Food would only be delusion then ? Buddha already said so long ago... Ferran Adrià, the El Bulli chef may well agree with this since he proposes a soup that will only become a soup when it melts...
